Pumpkin Pie with Whipped ‘Cream’

Pumpkin Pie is literally my absolute favourite dessert.  There is no other combination of flavours that perfectly captures the holiday season.  This recipe was a shared with Feed Life for our holiday E-Zine by Aaron from Gorilla Food.  Simply put, this pie is delicious.

Pumpkin Pie with Whipped 'Cream'
Crust Ingredients
  1. 2 cups coconut flakes
  2. 1 cup brazil nuts
  3. 1/2 cup pecans
  4. 8-9 medjool dates
  5. 2 Tbsp. coconut oil
Filling Ingredients
  1. 2 cup cashews
  2. 4 C pumpkin - (peeled and cut into 2 inch cubes) 3-4 bananas
  3. 13-15 medjool dates
  4. 125 ml of melted but not hot coconut oil
  5. 1 1/2 Tbsp. pumpkin spice
Whipped Cream Ingredients
  1. 5-7 medjool dates
  2. 1/2 tsp. vanilla
  3. 1 cup brazil nuts
  4. 3/4 cup coconut flakes 1 1/3 cup water
  5. 1 tsp. maca 1Tbsp. coconut oil
Crust Method
  1. 1. In a food processor, process nuts and coconut flakes until the mix is oily and flour like. Set aside in a bowl or the springform pan.
  2. 2. In the food processor, process dates and oil until toffee like.
  3. 3. Add the Brazil and coconut mix back in, and process until both mixes are well combined.
  4. 4. Press the dough evenly into a spring form pan.
Filling Method
  1. 1. In a food processor, finely process cashews to a creamy butter. Set aside in a bowl.
  2. 2. With a vita-mix, using the tamper, puree pumpkin cubes until smooth.
  3. 3. In the food processor, process dates and just a bit of coconut oil until the dates are smooth and toffee like. Add the rest of the oil and process un- til oil is melted and the dates are saturated..
  4. 4. Add spices and broken bananas to the oily date paste, process until all are combined and smooth. 5. Add pumpkin puree and cashew butter to the dates and banana, then process until combined. 6. Scrape the pumpkin mix out into the crust with a swirled top and then refrigerate to set.
Whipped Cream Method
  1. 1. Put all ingredients in a vita-mix and blend until smooth and creamy. Chill to set.
  2. Serve a dollop with pumpkin pie or any other dessert!
