This is a great lunch for school or work! Easy to pack and stays fresh!

Collard Wraps with Pumpkin Seed Pesto
- 1 recipe roasted root vegetables
- 1 recipe pumpkin seed pesto
- 1 box of broccoli sprouts
- 4 collard green leaves
- Spoon 2 TBS of pesto onto collard leaf along the spine. If the spine is quite think cut of the end. Layer the other ingredients on top and roll tightly using the spine as a support on the bottom. Secure with toothpick and wrap in parchment paper and store in fridge for up to 2 days.
