Cider Poached Pears

This is the recipe that will make you everyone’s favourite cook and get you invited to lots and lots of potlucks.  You can’t make too much of this as it’s just as delicious for breakfast the next day  – that is if you can save some for tomorrow!  Cider poached pears with cranberries and cashew cream is sinlessly delicious and packed full of cozy autumn flavours.

Cider Poached Pears with Cranberries and Cashew Hemp Cream
  1. 8 pears
  2. 1 bag of cranberries
  3. 1 small jug of apple cider
  4. 2 tsp cinnamon
  5. 1/2 tsp nutmeg
  1. 1 cups cashews (soaked for 4 hours minimum)
  2. 1/2 cup hemp
  3. 5 pitted dates
  4. 1/4 cup water
  5. 1 tsp cinnamon
  6. 1/2 tsp nutmeg
  7. 1/2 tsp vanilla extract or vanilla bean powder
  8. 1-2 tsp lemon juice
  9. 1/4 tsp sea salt
  1. Pour cider into sauce pan and bring to a simmer over medium heat. Add in cinnamon and nutmeg.
  2. Cut pears in quarters and remove the seeds. Place in simmering cider until tender approx. 15 min
For the cream
  1. Place cashews, hemp seeds, dates, cinnamon, nutmeg, lemon juice and sea salt in blender with 1/4 cup water. Blend until smooth. You may need to add a bit more water.
  2. Serve Pears with cranberries and a dollop of cream and a sprinkle of cinnamon. Used the remaining cider in the pot as a hot drink later.
