Celery Root Leek Chowder

It’s creamy, hearty and satisfying.  The perfect winter soup that pairs perfectly with Lemony Maple Millet Muffins.

Creamy Celery Root Chowder
  1. 8 cups water
  2. 1 celery root peeled and cubed
  3. 1 head of cauliflower cubed
  4. 4 leeks sliced thinly (only white parts)
  5. 4 cloves garlic crushed and chopped
  6. 1 tsp thyme
  7. ~add in later~
  8. 1 cup parsley chopped
  9. fresh dill for garnish
  10. 2 TBS lemon juice
  11. salt and pepper for seasoning after service
  1. Mix all ingredients (except parsley, dill, lemon juice) together in large soup pot on medium heat.
  2. Simmer for 30 min until celery root is tender.
  3. Remove 3/4 of the soup and puree in blender.
  4. Pour back into soup and stir in parsley and lemon juice.
  5. Serve with a garnish of dill and salt and pepper.
