Asian Style Raw Coleslaw

Nutrient Dense

Spring has arrived and all I feel like eating is vibrantly fresh raw veggies!  Whipped up this delicious colourful asian style raw coleslaw salad in 10min.  Served it with Miso soup and sushi (jicama and sunflower seed rice and avocado, cabbage, carrots and kale inside).  It’s creamy and crunchy and tangy – all important textures and flavours for staying satiated. Was a perfect light dinner recipe for a warm evening.  Cabbage is a mandatory food in a diet to prevent cancer!  It’s packed full of phyto-nutrients that kick those cancer cells to the curb!

 

Asian Style Raw Coleslaw
Ingredients
  1. 2 cups green cabbage, chopped
  2. 2 cups red cabbage, chopped
  3. sunflower seed sprouts (or any other sprouts)
  4. 1 tsp sea salt
Dressing
  1. 1/2 cup brown rice vinegar or apple cider vinegar
  2. 1 TBS fresh ginger
  3. 2 TBS lime juice
  4. 2 TBS coconut aminos/ bragg/ tamari/ soy sauce
  5. 1 TBS raw honey/ date paste/ maple syrup
  6. 2 tsp toasted or raw sesame oil
Garnish
  1. Black and white sesame seeds
Instructions
  1. Place chopped cabbage and salt into a large bowl and massage the salt into the cabbage. You will notice the cabbage starting to get damp as it's juices are released. It should look slightly wilted when you stop massaging. If you prefer not to have pink green cabbage you can massage the 2 types of cabbage in separate bowls as I have done here for this photo.
  2. Leave for 15min-3 hours
  3. Place all dressing ingredients in the blender and purée until smooth.
  4. Toss cabbage with dressing and add in sprouts.
  5. Sprinkle with sesame seeds.
  6. Serve and Enjoy!
